Calcium propionate is used as a preservative in a variety of products including, but not limited to: bread, other baked goods, processed meats, whey and other dairy products. In agriculture, it is used to prevent milk fever in dairy cows and as a feed supplement. Propionate, like benzoate, prevents microorganisms from producing the energy they need. However, unlike benzoate, propionate does not require an acidic environment. Calcium propionate is used as a mold inhibitor in baked products, usually at 0.1-0.4%.
