Sorbic acid, also known as 2,4-hexadienoic acid, is an approved acidic food preservative and one of the most widely used, highly effective, low-toxicity mold inhibitors. Sorbic acid and its salts inhibit mold growth, especially in low-pH systems, while showing useful selectivity against harmful microorganisms. It is widely used to protect food quality and extend shelf life.
